There has always been an option to add the "deposit" option under columns.

    What type of account ?

Looks like you are looking at "side bar group" not an account…..

Selct the account itself, not the "Side Bar group" ( Banking, Saving, Credit cards, Investments, cash, are sidebar groups )

The image you show, is the image I get for columns in a Side bar group, not in an account by itself

How do you select the account itself?

In any register you have a choice of displaying a single Amount column where inflows and outflows are designated by a positive or negative amount, or a pair of columns to show money in and money out. So for a bank account register, you can use either the single Amount column or the Payment and Deposit pair of columns. In an account group, like the one in your screenshot in the first post, you can use the single Amount column or the Inflow and Outflow pair of columns. It's the same in other types of registers, with the wording depending on the type of account. For instance, the pair of columns for a credit card is Charge and Payment. For an investment account, it's Cash Out and Cash in. For a loan/debt/asset account, it's Decrease and Increase.
