I 'd like to chart the balance in my savings account against my mortgage balance. It's easy to gauge this but a chart would be quite convincing.

Further, I did an account balances report for these two accounts but Quicken didn't project the balances beyond today even although it knows these numbers.
Given that the mortgage account balance is negative, and the savings account is positive you can just bring up a net worth report with just those two accounts selected. This isn't much different between plotting the house asset account against the loan account.
yes,, that's the same as account compare - but it doesn't project beyond to day. And it knows the future balances.
Well, you didn't say you want to predict the future.
The only way the savings account would have a "future" would be with reminders, and they wouldn't be "compounded interest". But you could predict the balances using the Projected Balances graph.
But I don't have any ideas for exactly how to graph this other than just do in a spreadsheet.
