I would like to revise my category list. If I delete or change a previously used category what happens to prior entries, previous months or years, where that category was used? Do they revert to "Uncategorized" OR is there a way to CHANGE one category for another that will change the category in all previous ledgers?

If you delete a category that is in use on a transaction(s) you will be prompted to choose a new category for those transactions. It will apply to ALL of them, so if you do not want them to all be changed you’ll need to do those by hand before deleting the category.

@mscbybls@gmail.com You can edit a category name, and it will be changed in every transaction using that category.

You can merge two or more categories into one, and all transactions using the former category(ies) will be updated to the one you merged into.

If you delete a category, Quicken warns you that doing so will remove the category (e.g. make uncategorized) all transactions which currently use that category.

What many users would like is the ability to hide categories, so old transactions will remain unchanged, but you won't see those old categories in the category list. (You can currently do this with Payees, but not Categories, Tags or Securities.) There is a feature request for this which the developers recently marked as "Planned", so hopefully we'll gain that functionality sometime later this year.
