I purchased Quicken In February 2020. I can't open my files because it is telling me I need a new subscription. I got instructions to trash my Quicken app and to download my version again in order to be able to open my files ( I purchased the CD). I need this info to be able to access information for my taxes. How can I do this. I don't want to lose my information.

You can reinstall the version of Quicken Mac which existed when your subscription expired. It will open your data file.

Since you purchased Quicken in February, 2020, it expired sometime in February 2021. Assuming it was after February 2, the latest release you can install is version 6.1.1 (released 2/2/21), which you can download here.
