How to I add bank a opening balance catgory to a bank account

I deleted the opening balance in error. How can I recreate

Just enter a transaction of the appropriate amount and date using the account's name as the Category in square brackets, such as [checking]. Then, mark that transaction as Reconciled.

Look at one of your other accounts for an example.

Unless your accountant is an experienced Quicken user, don't be too hard on them, not everything is obvious.
