Is is possible to define a "type" in the Mac version of Quicken?

You cannot edit that list at the moment. Meanwhile, you can add your VOTE to Add ETF (and others) to security types.
First, click on the underlined link above to go there, then click the little grey triangle under the VOTE count at the top of page 1 in the blue banner, so your vote will count (it may take a moment for your vote to register).
(If the triangle is black, your vote has already been counted.)

If you are referring to Asset Class, no-you cannot create your own category. You will have to use one of the pre-defined ones.0

The field I'm referring to is labeled as "type" on the Securities list. The standard values are "Bond", "US Savings Bond", "CD", "Index", "Mutual Fund", "Option" "Other" and "Stock". I'm attempting to define a new "type".0
