There are 2 ways of going about this.

If the email you are trying to change to does not exist as a Quicken ID yet--
Click here to sign in to your my account page. Then, click on "Change Email/Quicken ID" (see illustration below)

If the email you are trying to change to does exist as a Quicken ID--
Click here to fill out the "Email Change Request Form".
