Banking Account Only Showing "Transfers" Categories in Register

This issue started in November and this is not self inflicted as I've had Quicken setup the same for years.
Under "Banking" (specifically checking) accounts, for each transaction in the register, the categories list only displays "Transfer" categories. I do not have the bar on the left side to select different categories list as you will find under the "Tool" bar or I can find under different accounts and there isn't a checkbox nor settings wheel to select other items. My current workaround is copy and pasting previous used categories in the register, which works, but would like to get back to the full list.
Thank you

By any chance is the financial institution USAA?
Since the beginning of last year USAA has had a bug that tells Quicken that almost all the transactions are transfers. The result is that Quicken puts TXFR in the Check # field, and that in turn locks the category field to only transfers. If you clear the Check # field, then you can put in any category you like.Signature:

I didn't notice the problem for a long time because my USAA checking account had very little activity, and the two main things that I had where transfers between the checking and the savings account (so a transfer indication was fine) and matching to a paycheck reminder. The matching overrides this behavior.

What version, edition level (Starter, Deluxe, etc.) and release (R xx.xx) of Quicken are you using?
US, Canadian or other country version?
Click Help / About Quicken (Mac: Quicken / About Quicken) to get this information.I don't seem to be able to reproduce this on my system. For existing or new register transactions, the complete category view always shows up.Can you please capture one or more images of the parts of your Quicken window showing the issue, sensitive information blacked out as necessary to protect your privacy but annotated to describe the situation, and attach the image(s) here?
Please save images to files of file type PNG, JPG, or GIF only. They're easier to work with than PDF files.
You may have to capture the image, with the category popup showing, by using Shift-PRTScreen. Then open MS Paint or any other image creation tool and Paste the image. I would like to see the entire account register, with the Account Bar cropped off and Payee Names blacked out.

@Chris_QPW - you are 100% correct and removing the "TXFR" from Check # opened the categories. It started the beginning of September (I guess I was a little off from my November date).
