Accounts column and register balance
My Accounts column balance for my mortgage and my mortgage register balance are different. I think I adjusted my opening balance and deleted the transaction trying to reconcile. How can I do a balance adjustment to get them back in sync?

I don't quite understand what you're saying. HOW are those 2 numbers labeled in the account register. One seems to be most recent (NOT future dated) amount at the bottom of the Balance column … but I'm unclear what your 2nd number is.

Sorry I'm totally new to Quicken so I don't understand what you're saying either. I found a backup was made automatically last night (thank god!) so I think the easiest thing to do is restore the backup and not make that mistake again! 😅

In the account, click on "Payment Details". What numbers are at the bottom of the register? What's the latest, non-future, number?
In other words, what 2 numbers are you comparing.
And, while it's possible, it's not likely that restoring will help with this.

Today's balance in the register vs the balance in the account column.

There is NO "Today's Balance" field in the register. And you haven't addressed whether there is a future-dated txn (say, your next pmt).
Current Balance is from my June payment. Ending Balance includes my pre-recorded July payment (due 7/13).
Current Balance is above the Blue line in the register, Ending Balance is below. Both are in the register, just above/below that blue line.

My mortgage register only has Increase, Decrease, and Balance columns. I don't record future payments.

I think what is meant here is "account column" is the "account bar" (the side bar that has all the account names in it with the balances next to them), which by default will the on the left side (mine is set to the right side because I like it there better).
Example:
The balance that is shown in the account bar can be changed between two different values, the "Current Balance" and the "Ending Balance". In the register there are a number of balances. If you right click on a blank spot in the account bar you can change a number of settings for it.
There is the Balance column which has the running balance (just above the blue line is the current balance, which is also shown at the bottom of the register). Note if you sort the register by anything else than the date, the running balance won't make much sense.
If you have scheduled reminders for future transactions or future transactions entered into the register they are below the blue line and the last line in the Balance column would be the ending balance, which is again also shown at the bottom of the register.
And if your account is connected to an online account there will be an Online Balance at the bottom of the register.

Yes to clarify my mortgage balance in the Account Bar is different than my mortgage balance in the register. I am sorted by date and don't do future payments.
I believe what happened is I attempted to reconcile the balance in the register by changing the opening balance. It asked me something like if I really wanted to, and then I accepted. That started the problem. Then I deleted the opening balance (oops again). Then I tried to do a journal entry to adjust the balance. Then I noticed the two balances were out of whack. The transactions that I deleted were no longer in the register but the balance effects were still in the Account Bar balance.
